This feature is available on Stella. I don't think it is too challenging to implement here. In Stella, the relationship in the LookUp table is plotted on a x-y function chart where users can drag and modify any points on the curve. This comes in handy during group modeling or participatory sessions where anyone can test hypotheses or the impact of different relationships quickly without resorting to analytical functions.

This is a good idea and we've had this on our list for some time now. It's nice to get feedback like yours so we can determine whether to make it a higher priority. We will let you know if this gets put in our development schedule for an upcoming release. As of now, it is not on our immediate development schedule.
In the meantime, you could use a Microsoft add-in for manipulating points in a chart and then have GoldSim automatically import the data when you run the model. You could use a button in the dashboard to open the chart to make it feel more seamless.
